There are some recipes you make once and immediately know they’re going into your regular dinner rotation. This Creamed Corn Orzo with Salmon is one of those meals for me.
I originally found this recipe on Serving Dumplings, and after making it for the second or third time now, I can confidently say it’s always a hit. Creamy, flavorful, comforting, and surprisingly simple for something that tastes restaurant-worthy.
I tweaked the recipe slightly for two people, but honestly stayed very loyal to the original because it’s already so delicious. The combination of Cajun-spiced salmon with creamy corn and orzo is rich without feeling too heavy, and the lemon juice brightens everything perfectly.

One thing I noticed this time around was that the corn and orzo mixture ended up a little thinner than I personally like. Next time I may either cut back slightly on the broth or add a bit more orzo to soak up the extra liquid. That’s the beauty of cooking though — every time you make a recipe, you learn something new and can make it your own.
I also ended up with plenty of leftover creamed corn, which honestly felt like a bonus. It makes an amazing side dish for another dinner later in the week.
I truly believe good cooking starts with good ingredients. No, everything doesn’t have to be organic all the time — real life happens — but when you use quality ingredients and learn how to substitute with what you already have on hand, cooking becomes less intimidating and much more enjoyable.

Creamed Corn Orzo with Salmon
Serves 4
Seared Salmon
- 1 tbsp organic extra virgin olive oil
- 1 tbsp unsalted grass-fed butter
- 4 salmon fillets (I left the skin on and it worked perfectly)
- ¼ tsp sea salt
- 1 tsp organic garlic powder
- 1 tbsp Cajun seasoning
Creamed Corn Orzo
- 4 organic garlic cloves, minced
- 1 organic yellow onion, finely chopped
- ½ tsp sea salt
- 1 tsp organic black pepper
- 3 sprigs organic thyme, plus more for serving
- 1 cup organic orzo
- 3 ears organic corn, kernels removed
- 2½ cups organic chicken broth
- 1 cup grated Parmesan
- 1 tbsp organic lemon juice
- 1 cup organic heavy cream
- Chili flakes for serving
Instructions
- Pat the salmon fillets dry with a paper towel. Season both sides with salt, garlic powder, and Cajun seasoning.
- Shuck the corn and remove the kernels from the cob. Set aside.
- Heat olive oil and butter in a large skillet over medium-high heat. Add salmon and sear for 3–4 minutes per side. Remove and set aside.
- Reduce heat to medium and add garlic and onion. Cook for about 2 minutes until soft and fragrant. Stir in salt, pepper, and thyme leaves.
- Add the orzo and corn kernels and toast for 1 minute.
- Pour in chicken broth and bring to a boil. Reduce heat to medium-low and simmer uncovered, stirring frequently, until the orzo is almost al dente and most of the liquid is absorbed, about 10 minutes.
- Stir in Parmesan cheese, then add heavy cream and lemon juice. Simmer for 2 minutes.
- Return the salmon to the skillet and simmer another 2–3 minutes until heated through.
- Top with extra thyme, black pepper, and chili flakes before serving.
Notes From My Kitchen
- I found the sauce a little thinner than I wanted, so next time I may use slightly less broth or add a little more orzo.
- The leftover creamed corn makes an incredible side dish the next day.
- Don’t stress about substitutions — cooking is all about learning and making recipes your own.
- Good ingredients really do make a difference.
