If you love crispy chicken cutlets with a little Italian heat, you are going to LOVE this Calabrian Chili Chicken Milanese! 🌶️🍗
I wasn’t quite sure what I was making for dinner tonight, but I had some beautiful pounded chicken cutlets from New York Butcher Shoppe in the refrigerator. I was tired of making the same old breaded chicken cutlets, so I decided to shake things up and marinate them in Calabrian chili paste.

And OMG, you guys! What a difference!
These cutlets were crunchy, spicy, flavorful, and absolutely delicious. The combination of crispy Panko breadcrumbs, salty Pecorino Romano cheese, and spicy Calabrian chili paste was a match made in heaven. I couldn’t stop eating them! Honestly, I just wish I had made another pack of chicken. 🤣
The crunch was amaze balls!
To balance all that delicious heat and crispy goodness, I topped the chicken with a simple arugula salad dressed with extra-virgin olive oil and organic balsamic vinegar. The peppery arugula and tangy dressing were the perfect finishing touch.
This is Italian-American cooking with a spicy twist, just the way I like it. You don’t need a complicated recipe or a long list of ingredients to make an incredible dinner. Sometimes, all it takes is a little creativity and a willingness to spice things up!
If you’re looking for a new way to enjoy chicken cutlets, give this recipe a try. Your family might just ask you to make it again tomorrow!
Calabrian Chili Chicken Milanese Recipe
Prep Time: 20 minutes, plus marinating time (15-60 minutes)
Cook Time: Approximately 15–20 minutes, depending on the thickness of the chicken and the size of your skillet
Servings: 4-6
Ingredients
For the chicken:
- 1 to 1½ pounds chicken cutlets, pounded thin
- 2 tablespoons or more Calabrian chili paste
- ½ cup all-purpose flour
- Sea salt and freshly organic ground black pepper, to taste
- Garlic powder, to taste
- 2 large eggs, beaten
- 2 cups Panko breadcrumbs, or more as needed
- ½ cup grated Pecorino Romano cheese
- Hot red pepper flakes, to taste
- Extra-virgin olive oil, for frying
For the arugula salad:
- 2 cups fresh arugula
- Extra-virgin olive oil, to taste
- Organic balsamic vinegar, to taste
- Sea salt and freshly organic ground black pepper, to taste
Instructions
1. Marinate the chicken.
Place the thin chicken cutlets in a dish and coat them with the Calabrian chili paste. Use more if you love a spicy kick! Cover and refrigerate until you’re ready to cook. Remove the chicken from the refrigerator about 15 minutes before cooking.
2. Prepare your breading station.
Place the flour on a plate and season with salt, pepper, and garlic powder. Beat the eggs in a shallow bowl.
In another shallow dish, combine the Panko breadcrumbs, grated Pecorino Romano, and hot red pepper flakes. Mix well.
3. Bread the chicken.
Working with one cutlet at a time, coat the chicken in the seasoned flour, dip it into the beaten eggs, and then press it into the Panko mixture until well coated on both sides.
Set the breaded cutlets aside while you prepare the skillet.
4. Fry until golden and crispy.
Heat a generous amount of extra-virgin olive oil in a skillet over medium to medium-high heat. Once the oil is hot, carefully add the chicken cutlets without overcrowding the pan.
Cook until the first side is golden brown and crispy, then flip and cook the other side until golden and the chicken is cooked through. Work in batches as needed, adding more oil if necessary.
The chicken should reach an internal temperature of 165°F. Transfer the cooked cutlets to a wire rack to help preserve that wonderful crunch.
5. Make the arugula salad.
In a bowl, toss the fresh arugula with extra-virgin olive oil, organic balsamic vinegar, salt, and freshly ground black pepper. Taste and adjust the dressing to your liking.
6. Plate and serve.
Place the crispy chicken cutlets on a serving plate and top with the dressed arugula. Serve immediately while the chicken is hot and crunchy.
Jacq’s Tips for the Best Chicken Milanese
- Adjust the heat: Calabrian chili paste varies in intensity, so start with two tablespoons and add more to suit your taste.
- Don’t skip the Pecorino Romano: It adds a wonderful salty, savory flavor to the Panko crust.
- Keep the chicken crispy: Avoid overcrowding the skillet, and let the cooked cutlets rest on a wire rack instead of stacking them.
- Serve immediately: The contrast between the crunchy chicken and fresh, peppery arugula is what makes this dish so delicious.
- Make it a meal: Serve with roasted potatoes, a simple pasta dish, or your favorite vegetable.
Final Thoughts
This Calabrian Chili Chicken Milanese is proof that a simple chicken cutlet can become something extraordinary with a little creativity. It’s crispy, spicy, cheesy, and full of flavor, with fresh arugula to balance everything out.
