The Italian Pasta Dish I’ve Been Making for Years (And Still Crave Every Time)

Some recipes come and go, while others earn a permanent spot in your menu rotation. This Sardinian Saffron Pasta with Pork and Tomato Sauce is one of those recipes for me.

I’ve been making this dish for years, and every time I serve it, it reminds me why it never gets old. It’s hearty, comforting, and packed with flavor from simple ingredients: ground pork, tomatoes, onions, garlic, saffron, and plenty of Pecorino Romano cheese.

Over the years, I’ve made a few tweaks to suit my family’s tastes and what I have on hand. Most recently, I ran out of pancetta and substituted bacon. The result was absolutely delicious.

What makes this pasta special is the saffron. It adds a subtle earthy flavor and gives the pasta its gorgeous golden color. Combined with the rich pork sauce and salty Pecorino Romano, it’s the kind of meal that feels special enough for Sunday dinner but easy enough for a busy weeknight.

Best of all, the sauce only needs about 25 minutes to simmer, making this a surprisingly quick meal for something that tastes like it’s been cooking all day.

If you’re looking for a comforting pasta recipe that’s a little different from the usual meat sauce, give this one a try. It has become a staple in our home, and I think you’ll understand why after the first bite.

Sardinian Saffron Pasta with Pork and Tomato Sauce

Serves 6

Ingredients

  • 2 tablespoons organic extra virgin olive oil
  • 4 ounces pancetta or bacon, finely chopped
  • 1 medium onion, finely chopped
  • 2–3 garlic cloves, sliced
  • ¼ cup chopped fresh organic Italian parsley
  • Hot red pepper flakes, to taste
  • 1 pound ground pork
  • 1 (28-ounce) can organic crushed tomatoes with added puree
  • 2 bay leaves
  • 2 teaspoons chopped fresh organic sage
  • 1 pound pasta of your choice (rigatoni, shells, or another shape that holds sauce well)
  • 1½ teaspoons saffron threads, crumbled
  • 1 cup freshly grated Pecorino Romano cheese, divided
  • Sea salt and freshly ground organic black pepper, to taste

Directions

  1. Heat the olive oil in a large heavy skillet over medium heat.
  2. Add the pancetta or bacon and sauté until the fat begins to render, about 3 minutes.
  3. Add the onion and cook for 1–2 minutes. Stir in the garlic, parsley, and red pepper flakes. Continue cooking until the onion is soft and translucent, about 3–5 minutes.
  4. Add the ground pork and cook until browned, breaking it up with a spoon as it cooks, about 8 minutes.
  5. Stir in the crushed tomatoes, bay leaves, and sage.
  6. Reduce the heat to medium-low and simmer for about 25 minutes, stirring occasionally, until the sauce thickens and the flavors meld together.
  7. Season with black pepper and salt if needed.
  8. Meanwhile, bring a large pot of generously salted water to a boil.
  9. Add the pasta and saffron threads to the boiling water. Cook until the pasta is al dente.
  10. Drain the pasta and return it to the pot.
  11. Add the sauce and ½ cup of the Pecorino Romano cheese. Toss well to combine.
  12. Transfer to a serving bowl and sprinkle with the remaining cheese and additional red pepper flakes if desired.
  13. Serve immediately and enjoy.

Tips for Success

  • Go easy on the salt. Between the pancetta or bacon and the Pecorino Romano, the sauce may already be salty enough.
  • Always taste before adding additional salt.
  • If you’d like the saffron flavor to be more pronounced, add a small pinch directly to the sauce while it simmers.
  • Pancetta is traditional, but bacon makes an excellent substitute and adds a wonderful smoky flavor.
  • Whenever possible, use organic ingredients for the freshest flavor.
